Cottage cheese pancakes with fruit jam

Ingredients & quantities

Pancakes

  • 2 eggs
  • ½ cup (125 ml) egg whites
  • 1 scoop Shop Santé protein powder
  • ½ jar cottage cheese
  • 1 cup (250 ml) gluten-free flour (or white flour)
  • ¼ cup (60 ml) milk of your choice

Jam

  • 1 bag frozen fieldberries
  • 2 tbsp (30 ml) cornstarch

Toppings

  • ½ jar cottage cheese
  • 10 mint leaves

Steps:

  1. Place all pancake ingredients in a bowl. Mix well.
  2. In a skillet over medium heat sprayed with oil, put ¼ cup (60 ml) of the pancake mixture. Cook for 3 minutes on each side.
  3. Repeat to make 8 to 12 pancakes.
  4. Place frozen fruit and ¼ cup (60 ml) water in a saucepan. Bring to a boil and simmer for 15 minutes, stirring regularly.
  5. Dissolve cornstarch in ¼ cup (60 ml) water. At the end of cooking, add this mixture to the pot while the contents are still hot. Mix well.
  6. Serve pancakes with jam and toppings.

Eggs with 2 cheeses and bacon

Ingredients & quantities:

  • 8 eggs
  • ½ cup (125 ml) egg whites
  • ½ jar cottage cheese
  • 1 cup (250 ml) light cheddar cheese, grated
  • 4 green onions, chopped
  • 1 package bacon, sliced

Steps:

  1. In a skillet over medium heat, place bacon slices and ¼ cup (60 ml) water. Cook for about 10 minutes, turning the slices regularly. When all the water has evaporated, continue cooking for 3 to 4 minutes to crisp up the bacon.
  2. Place eggs, egg whites and cottage cheese in a saucepan over low heat, sprayed with oil. Cook for 10 minutes, stirring regularly.
  3. At the end of the cooking time, add the cheddar cheese and green onions. Season with S&P and mix well.
  4. Serve egg scramble with bacon slices.

Oven-roasted garlic potatoes

Ingredients & quantities

  • 1 kg white potatoes, cut into 2 cm cubes
  • 4 garlic cloves, chopped
  • 2 tbsp (30 ml) spices of your choice
  • 2 tbsp (30 ml) oil of your choice

Steps:

  1. Preheat oven to 400.
  2. On a parchment-lined baking sheet, place all potato ingredients. Season with S&P. Mix well.
  3. Bake for 40 minutes, turning halfway through.
