Ingredients
- 125 ml (½ cup) of Shop Santé dark chocolate plant-based protein
- 30 ml (2 tbsp) cocoa powder
- 1.25 ml (¼ tsp) salt
- 160 ml (⅔ cup) of Nutella
- 2.5 ml (½ tsp) peppermint extract
- 250 ml (1 cup) milk chocolate chips
- 45 ml (3 tbsp) shortening
Preparation
- In a large bowl, sift and mix the protein powder, cocoa powder, and salt.
- Add the Nutella and peppermint extract and mix until smooth. If necessary, knead the dough by hand to fully incorporate the ingredients.
- Place a wire rack on a baking sheet lined with parchment paper. Shape the mixture into 13 small balls, each about 15 ml (1 tbsp) in size, and place them on the rack.
- Melt the chocolate and shortening in the microwave, stirring every 20 seconds . Mix well until smooth.
- Coat each truffle with melted chocolate, either by gently spooning them over or dipping them directly into the chocolate. Refrigerate for at least 30 minutes to allow the chocolate to set, then refrigerate until ready to serve.
- If desired, when serving, sprinkle the truffles with a small amount of cocoa powder.
