Protein Strawberry Popsicles

Ingredients (10 servings)

  • 125 ml (½ cup) graham cracker crumbs
  • 30 ml (2 tbsp) unsalted butter, melted
  • 500 ml (2 cups) diced fresh strawberries
  • 15 ml (1 tbsp) granulated sugar
  • 250 ml (1 cup) cream cheese, at room temperature
  • 160 ml (⅔ cup) vanilla Greek yogurt
  • 60g vanilla isolate
  • 5 ml (1 tsp) lemon zest
  • 1.25 ml (¼ tsp) vanilla extract

BULK - Isolate (1lb) - Shop Santé

Preparation

  1. Mix the graham cracker crumbs with the melted butter in a bowl until you get a sandy texture.
  2. Heat the strawberries and sugar in a small saucepan over medium heat for 5 minutes, until slightly thickened. Purée until smooth using an immersion blender. Let cool in the refrigerator.
  3. In a narrow container, using an immersion blender, blend the tempered cream cheese with the Greek yogurt, vanilla protein isolate, lemon zest, and vanilla extract until smooth.
  4. In a bowl, mix the strawberry coulis with half of the cream cheese base.
  5. Pour a small amount of the strawberry mixture into the bottom of the popsicle molds. Add a layer of the plain cheese mixture. Repeat alternating between the two mixtures until the molds are full, leaving 1 cm of space at the top of each mold.
  6. Spread about 1 tbsp (15 ml) of the graham cracker crumb mixture into the empty space of each pan. Press lightly to compact.
  7. Insert the sticks and freeze for 6 hours or until the popsicles are completely frozen.
