Ingredients

Nutritious protein pancakes

  • 180 ml (¾ cup) large flake oats
  • 60 ml (¼ cup) isolate (vanilla)
  • 80 ml (⅓ cup) all-purpose flour
  • 5 ml (1 tsp) baking soda
  • 2.5 ml (½ tsp) baking powder
  • 1.25 ml (¼ tsp) table salt
  • 125 ml (½ cup) of milk
  • 125 ml (½ cup) plain Greek yogurt 2 large eggs
  • 5 ml (1 tsp) liquid stevia (flavor of your choice)
  • 15 ml (1 tbsp) vegetable oil

Toppings

  • Plain Greek yogurt to taste
  • Fresh fruit to taste


Preparation

  1. In a blender or food processor, grind the oat flakes to obtain oat flour.
  2. In a medium bowl, combine the homemade oat flour with the protein powder, flour, baking soda, baking powder, and salt.
  3. In a large bowl, whisk together the milk, Greek yogurt, eggs, and liquid stevia until well blended.
  4. Using a wooden spoon, stir the dry ingredient mixture into the wet ingredient mixture until smooth and evenly combined.
  5. In a nonstick skillet over medium heat, heat the vegetable oil. Pour about 1/4 cup (60 ml) of the mixture into the skillet and cook for 2 minutes per side or until the pancake is golden brown. Cook all pancakes the same way. Serve with your desired toppings.
