Ingredients (6 cups - 1.5L)
- 500 ml (2 cups) large flake oats
- 250 ml (1 cup) coarsely chopped pecans
- 125 ml (½ cup) coarsely chopped almonds
- 125 ml (½ cup) pumpkin seeds
- 70gIsoGen ® protein powder (vanilla)
- 5 ml (1 tsp) ground cinnamon
- 1.25 ml (¼ tsp) ground ginger
- 1.25 ml (¼ tsp) ground nutmeg
- 0.5 ml (⅛ tsp) ground cloves
- 1.25 ml (¼ tsp) table salt
- 80 ml (⅓ cup) maple syrup
- 60 ml (¼ cup) pumpkin puree
- 30 ml (2 tbsp) melted coconut oil
- 5 ml (1 tsp) vanilla extract
- 125 ml (½ cup) dried apples, cut into small pieces (optional)
Preparation
- Heat oven to 325°F (165°C) and line a large baking sheet with parchment paper.
- Combine oats, pecans, almonds, pumpkin seeds, protein powder, cinnamon, ginger, nutmeg, cloves, and salt in a large bowl.
- In a second bowl, whisk together the maple syrup, pumpkin puree, melted coconut oil, and vanilla.
- Pour the liquid mixture over the dry ingredients. Mix well to coat evenly.
- Spread the mixture evenly on the baking sheet. Bake for 35 minutes or until the granola is golden brown and crispy. Stir a few times during baking.
- Let cool completely, then stir in the dried apple pieces.
- Transfer to an airtight container and store at room temperature for up to 2 weeks.
