This pasta with hidden peppers and tomatoes is perfect for a comforting, colorful, and filling meal. With penne Sport Pasta, creamy cottage cheese, and a boost of roasted vegetables, you get a plate that tastes like a restaurant… but with nutrition worthy of an athlete.

Ingredients: (4 Servings)
- 350 g of penne Sport Pasta
- 1 cup of cottage cheese
- 2 red peppers, halved, seeded
- 2 Italian tomatoes
- 2 cloves of garlic
- 1 red onion, coarsely chopped
- 1/3 cup nutritional yeast
- a few chopped basil leaves
- 1 tbsp Fit Cook Foodz All-Purpose Spice Mix
- cayenne pepper flakes (optional)
- salt and pepper to taste
- 2/3 cup Parmesan cheese
Steps:
- Preheat oven to 400°F.
- In a pot of boiling water, cook the Sport Pasta according to the package instructions. Drain, reserving the cooking water, and set aside.
- Place the tomatoes, garlic, and peppers on a baking sheet lined with parchment paper. Place the peppers, rounded side up, and add a drizzle of oil, salt, and pepper.
- Bake for 30 minutes or until peppers and tomatoes are tender.
- In a bowl, combine the cottage cheese, tomatoes, bell peppers, garlic, red onion, 5 basil leaves, and nutritional yeast. Using a hand blender, blend until smooth.
- Add the sauce to the pasta. Mix.
- Place the pasta in a serving dish. Top with Parmesan cheese, basil, Fit Cook Foodz Passe-Partout Spices, and cayenne pepper flakes for a spicy kick.
About the recipe:
- If you want to increase your protein intake, add shredded chicken, shrimp, or shredded tofu.
- For a lactose-free version, use lactose-free cheeses.
