It's now or never before the end of summer! Fire up your BBQ, invite your friends and cook the recipe I'm presenting to you today - your guests will go crazy! A much healthier, more sustaining version of traditional nachos.

Ingredients:

  • 2 bags Quest taco chips
  • 2 chicken breasts
  • 2 tomatoes, diced
  • ¼ cup cheese
  • 1 small red onion, finely chopped
  • FitCook Foodz Tex-Mex spice blend
  • Fit Cook Foodz Legendary BBQ sauce
  • ¼ cup guacamole
  • ¼ cup Greek yogurt
  • Finely chopped coriander to taste (optional)

Steps:

  1. Preheat BBQ.
  2. Season chicken breasts with Tex-Mex spice blend.
  3. Coat chicken breasts with La Légendaire BBQ sauce.
  4. Grill chicken breasts on BBQ until cooked through.
  5. Combine tomatoes, red onion and cilantro.
  6. Place Quest potato chips, grated cheese, cooked chicken breasts, tomato, onion and cilantro mixture on aluminum plate. Once assembled, place on the BBQ until the cheese is slightly melted.

Tips:

  • If you don't have a BBQ, you can cook the chicken in a frying pan and bake the nacho au gratin.
  • If you don't like cilantro or hot peppers, you can remove them.
  • Greek yogurt is used as a substitute for sour cream.
