Strawberry Cheesecake

Ingredients: (3 servings)

  • ½ cup oatmeal
  • 2 tbsp sugar-free caramel sauce from @fitcookfoodz
  • 2 tsp coconut oil
  • 1 cup cottage cheese
  • 1 scoop of IsoGen protein vanilla ice cream @shopsante
  • 2 tbsp cream cheese
  • 1 1/2 cups hulled strawberries

Steps:

  1. In a food processor, place the oat flakes. Pulse for a few seconds to obtain a flour-like texture, but leaving some lumps of oat flakes.
  2. Pour the crushed oats into a bowl. Add the sugar-free caramel sauce and melted coconut oil.
  3. Mix well until a sticky texture is obtained. Set aside.
  4. Using a stick blender, blend the cottage cheese with the vanilla protein and cream cheese until smooth.
  5. Using a stick blender, blend 1 cup of hulled strawberries until smooth.
  6. Cut the remaining half cup of strawberries into small cubes. Fold them into the smooth strawberry puree.
  7. Take 3 small Mason jars or clear glasses and spread the oat mixture evenly at the bottom of each jar and press down well with a spoon.
  8. Then add an equal layer of cheese filling to each jar.
  9. Finish with a generous layer of strawberry coulis.

Tips:

  • You can make the same recipe with raspberries.
  • Add a tablespoon of crushed nuts (almonds, pecans, or hazelnuts) to your oat base for a more indulgent texture and a little crunch in the mouth.
