Ingredients
- 160 ml (⅔ cup) blueberries
- 160 ml (⅔ cup) raspberries
- 125 ml (½ cup) blackberries
- 60 ml (¼ cup) sugar
- 10 ml (2 teaspoons) lemon zest
- 7.5 ml (½ tbsp.) vanilla extract
- 20 g Shop Santé fiber (Quebec berry mix)
- 1 can (398 ml) coconut milk
Preparation
- In a small saucepan over medium heat, combine fruit, sugar, lemon zest and vanilla. Heat for about 4 minutes, or until fruit is tender and sugar has completely dissolved. Allow to cool.
- In a large container with a pouring spout, vigorously whisk the coconut milk with the Shop Santé fiber powder. Stir in fruit mixture.
- Pour mixture into popsicle molds, then insert sticks into center of molds.
- Freeze for at least 6 hours. To make unmolding easier, run a little hot water over the base of the molds.
